In a bowl, combine vinegar, orange juice, adobo sauce, chili powder, cumin, garlic powder, paprika, salt, and pepper. Add the sliced pork and pineapple, and toss to coat. Marinate in the fridge for at least 1 hour or overnight for best flavor.
Heat olive oil in a large skillet or grill pan over medium-high heat. Cook the marinated pork and pineapple mixture for 5-7 minutes until the pork is cooked through and slightly caramelized.
Warm the corn tortillas in a dry skillet or on the grill for 1-2 minutes until soft.
Spoon the cooked pork and pineapple mixture onto each tortilla. Top with chopped cilantro and diced onion.
