In a medium saucepan, bring water or chicken broth to a boil. Slowly whisk in the grits, stirring constantly to prevent lumps. Reduce heat to low.
Cover and simmer the grits for 15-20 minutes, stirring occasionally, until thick and creamy. If using, stir in heavy cream for extra richness.
Once the grits are cooked, stir in butter, cheese, salt, and pepper. Mix until the cheese is melted and the grits are smooth.
