Sopes are traditional Mexican small, thick corn tortillas topped with various ingredients such as refried beans, meats, vegetables, and salsa. A delicious and customizable dish perfect for any occasion!
In a bowl, mix masa harina and salt. Gradually add warm water until a smooth dough forms. Divide the dough into 8 equal balls and flatten each into thick discs (about 1/4 inch thick).
Heat a skillet over medium heat and cook each disc for about 2-3 minutes per side until lightly browned and cooked through. Remove and set aside.
While the sopes are still warm, pinch the edges to form a raised border, creating a small rim to hold the toppings.
In a skillet, heat oil over medium heat. Fry each sope for about 1-2 minutes per side until crispy. Drain on paper towels.
Spread a layer of refried beans on each sope, followed by ground meat if using, then top with shredded lettuce, salsa, and queso fresco. Drizzle with sour cream if desired.
