Rub the pork shoulder with smoked paprika, cumin, salt, and black pepper. Place the sliced onion and minced garlic at the bottom of the slow cooker. Add the pork on top.
Pour 1/2 cup of barbecue sauce over the pork. Cover and cook on low for 8 hours or until the pork is tender and shreds easily with a fork.
Remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the cooker and mix with the remaining barbecue sauce.
Toast the hamburger buns if desired. Pile the pulled pork onto each bun and top with coleslaw if using.
