1 lb chicken thighs, 1 bell pepper, diced diced 1/2 lb smoked sausage sliced 1/2 lb shrimp peeled and deveined 1 cup long-grain rice 1 onion diced 2 celery stalks diced 3 cloves garlic minced 1 can (14.5 oz) diced tomatoes 3 cups chicken broth 2 tsp Cajun seasoning 1 bay leaf Salt and pepper to taste 2 tbsp olive oil Chopped green onions for garnish

In a large pot, heat olive oil over medium heat. Add chicken and sausage, cooking until browned. Remove and set aside.
In the same pot, add onion, bell pepper, celery, and garlic. Cook until softened, about 5 minutes.
Stir in the rice, diced tomatoes, chicken broth, Cajun seasoning, bay leaf, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
Stir in the shrimp and cooked chicken and sausage. Cook for an additional 5 minutes, until shrimp are pink and cooked through.
Remove the bay leaf, garnish with chopped green onions, and serve hot!
