Ingredients
  

  • 1 lb chicken thighs, 1 bell pepper, diced diced
  • 1/2 lb smoked sausage sliced
  • 1/2 lb shrimp peeled and deveined
  • 1 cup long-grain rice
  • 1 onion diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups chicken broth
  • 2 tsp Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped green onions for garnish

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add chicken and sausage, cooking until browned. Remove and set aside.
  • In the same pot, add onion, bell pepper, celery, and garlic. Cook until softened, about 5 minutes.
  • Stir in the rice, diced tomatoes, chicken broth, Cajun seasoning, bay leaf, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  • Stir in the shrimp and cooked chicken and sausage. Cook for an additional 5 minutes, until shrimp are pink and cooked through.
  • Remove the bay leaf, garnish with chopped green onions, and serve hot!
