Ingredients
  

  • 4 green tomatoes sliced
  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 2 large eggs
  • 1/4 cup buttermilk
  • Vegetable oil for frying

Instructions
 

  • In one bowl, combine cornmeal, flour, salt, pepper, and paprika. In another bowl, whisk together eggs and buttermilk.
  • Dip each tomato slice first into the egg mixture, then into the cornmeal mixture, ensuring an even coating.
  • In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until hot.
  • Carefully add the coated tomato slices to the hot oil, frying in batches for about 3-4 minutes on each side, or until golden brown.
  • Remove the fried tomatoes and drain on paper towels. Serve hot as an appetizer or side dish!
