Ingredients
  

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions
 

  • Preheat your oven to 400°F (200°C). Grease an 8x8-inch baking dish or cast-iron skillet.
  • In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt. Stir until well mixed.
  • In another bowl, whisk together milk, vegetable oil, and eggs until smooth.
  • Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix.
  • Pour the batter into the prepared baking dish and bake for 20-25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  • Let cool slightly, cut into squares, and serve warm. Enjoy!
