Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz diced tomatoes (with juice)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • 1 tablespoon olive oil for sautéing
  • 1 cup beef broth or water

Instructions
 

  • Sauté the Aromatics
  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Brown the Beef
  • Add the ground beef to the pot. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Add Ingredients
  • Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Mix well to coat the meat and onions in the spices. Then, add the diced tomatoes, kidney beans, and beef broth. Stir to combine.
  • Simmer the Chili
  • Bring the mixture to a simmer. Reduce heat to low and let it cook uncovered for 20-30 minutes, stirring occasionally. This will help the flavors meld together and thicken the chili.
  • Serve and Enjoy
  • Once the chili is ready, taste and adjust seasoning if needed. Serve hot with your choice of toppings, such as cheese, sour cream, and green onions.
