Sauté the Aromatics
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
Brown the Beef
Add the ground beef to the pot. Break it apart with a wooden spoon and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
Add Ingredients
Stir in the chili powder, cumin, paprika, cayenne pepper, salt, and pepper. Mix well to coat the meat and onions in the spices. Then, add the diced tomatoes, kidney beans, and beef broth. Stir to combine.
Simmer the Chili
Bring the mixture to a simmer. Reduce heat to low and let it cook uncovered for 20-30 minutes, stirring occasionally. This will help the flavors meld together and thicken the chili.
