BANANA PUDDING

Ingredients
  

  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 2 3/4 cups milk
  • 3 large egg yolks beaten
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 3 ripe bananas sliced
  • 1 box (12 oz) vanilla wafers

Instructions
 

  • In a saucepan, whisk together sugar, flour, and salt. Gradually add milk, then stir in the beaten egg yolks. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and stir in vanilla extract.
  • In a mixing bowl, whip heavy cream with powdered sugar until soft peaks form.
  • In a serving dish, layer vanilla wafers, sliced bananas, and pudding mixture. Repeat layers until all ingredients are used, finishing with pudding on top. Spread the whipped cream over the final layer.
  • Refrigerate for at least 2 hours before serving to allow flavors to meld. Enjoy chilled!
