Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter cold and cubed
  • 1/4 cup cold water
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 6-8 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter cut into small pieces

Instructions

  • In a large bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add cold water and stir until the dough comes together. Divide the dough in half, shape into discs, and refrigerate for at least 30 minutes.
  • In a separate bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice.
  • Roll out one dough disc and place it in a pie dish. Fill with the apple mixture, and dot with small pieces of butter. Roll out the second dough disc and place it over the apples. Crimp the edges to seal and cut small slits in the top to allow steam to escape.
  • Preheat the oven to 425°F (220°C). Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Allow the pie to cool for at least 1 hour before serving. Enjoy with whipped cream or ice cream!
