Lazy Sundays call for appetizing brunches! And any brunch without Aloo ki tarkari is incomplete. This recipe is famous for being a favourite brunch dish in Pakistan and India. It is also great for when you cant decide what to cook for lunch or dinner, or when you want to make something that comes together quickly.
The limited number of ingredients means that its an easy recipe. To top it off, this is a one-pot recipe that will leave you licking your fingers.
You can serve this traditional vegan delight with Puri or paratha. It’s delicious either way!
If you were to search, you would find dozens of different versions of this recipe. Aloo ki tarkari is famous all over India and Pakistan, and every region has their own variation. But my recipe requires very little effort and is simple!

Ingredients
Here’s the short and sweet list of ingredients you need to make this delicious vegetarian dish, Aloo ki Tarkari:

- Potatoes: You can’t make Aloo ki tarkari without Aloo, or potatoes! Wash and peel the potatoes, and cut them into thin discs. You can cut them in any shape you like, but the traditional way is to cut them into discs. Place the potatoes in cold water to avoid colour change.
- Spices and aromatics: This dish requires very few spices. All you need is salt and red chilli powder.
- Onions: The base of most Indian cuisine is the onion. Peel and slice thinly.
- Soya leaves: Soya leaves add a unique flavour and aroma to the curry.

Instructions
Here’s the method to make Aloo ki Tarkari:
Start by pouring oil into a pan and letting it heat up. Add the sliced onions to the oil and saute until golden brown.

- Add oil to the pan and let it heat up.

- Add the sliced onions to the oil.
Now, add the sliced potatoes to the pan.

- Saute the onions till golden brown.

- Then, add the sliced potatoes to the onions.
Next, add the red chilli powder and salt.

- Next, add the red chilli powder.

- Add salt
Saute the spices and the potatoes. Then add water, cover the pan, and let the potatoes cook.

- Saute the potatoes and spices.

- Add half a cup of water to the potatoes and mix.

- Let it come to a boil.

- Cover the pan and allow to cook for 10 minutes or till the potatoes are tender.
Cook till the potatoes are tender and the water has evaporated, about 10 minutes.

- Uncover the pan. The potatoes will be tender now.

- Add the green chillies.
Uncover the pan and add the garnishes: green chillies, and soya leaves.

- Sprinkle the soya leaves on top.

- Let the curry cook for another 3-4 minutes.

Your delicious Aloo ki Tarkari is now ready to serve!
Hint: Place the peeled and cut potatoes in cold water until you cook them. Otherwise, they may turn a dark colour.

This is a simple, one-pot recipe. Here’s the equipment I used to make it:
- 1 Large pan.
- Knife and chopping board.
- Measuring spoons.
Serving Suggestion
Traditionally, this ethnic recipe is served with puri, paratha, or even tandoori naan. It is also served with a side of Achaar, or pickles, and Suji ka Halwa, or semolina pudding.
But, no matter how you choose to eat it, there is no doubt in my mind that you’ll be making this repeatedly!
Top Tips
- Don’t overcook the onions. As soon as they change colour, add the potatoes.
- Adjust the spices according to your taste.
- Soya leaf adds a delicious aroma and flavour to this dish. If you can’t find it, you can use coriander leaves or parsley instead.
FAQ
You can add paprika powder or Kashmiri laal mirch with the red chilli powder.
You can cook it on high heat to remove any moisture. Add some more spices like red chilli powder, coriander powder, and cumin powder. Once it’s completely dry, add some fresh coriander leaves, and use the dough that’s used to make roti, to make Aloo Paratha. You can also use this same mixture to stuff Aloo samosas.
Different types of potatoes can have different cooking times. The type of potato you’re using may take longer to cook. Add another half a cup of water and let it cook for another 10 minutes. Check occasionally to ensure it doesn’t burn.
